French toast was at the very bottom of my list of favorite breakfast foods for a considerable amount of time.
Waffles, eggs Benedict, pancakes, sausage gravy and biscuits, omelets, and then a few more eggy main dishes followed by French toast were the items that were served this morning. At its core, it is quite easy. Breakfast can be prepared in a flash with just a few slices of bread, a couple of eggs, and a glass of milk.

The reality, however, did not live up to the expectations I had for the French toast that I made each and every time. I wanted the edges to be golden brown and crispy, and the center to be sweet and custardy. Instead, I was given caked-on bread. Not my top pick at all. However, I never stopped trying to make French toast. I had a feeling that I would one day be able to make that dream come true, and friends? This very day is that day.
Ingredients
- For the filling:
- 3/4 cup ricotta cheese
- 1/4 cup cream cheese, softened
- Zest of 1 orange
For the syrup:
- 3/4 cup honey
- Juice of 1/2 an orange
- 1/2 teaspoon cinnamon
For the french toast:
- 1/2 cup sliced almonds
- 3 eggs
- 3/4 cup milk
- Splash vanilla
- Pinch salt
- 8 thick slices challah or brioche bread
- 3 Tablespoons butter

How to make it
- The oven should be preheated to 350 degrees. The ricotta and cream cheese should be whipped together until they are completely smooth in the bowl of an electric mixer that is equipped with the whisk attachment. Orange zest should be stirred in.
- The honey, orange, and cinnamon should be whisked together in a separate small bowl. Ricotta should be stirred after three tablespoons of that mixture have been added to it. Keep the remaining ingredients for the topping.
- The eggs, milk, vanilla extract, and salt should be mixed together in a bowl that is shallow and wide. Arrange the almonds in a single layer on a plate. A skillet should be heated over medium heat. Half of the butter should be melted in the skillet.
- Half of the bread slices should be dipped in the egg mixture, and then they should be allowed to soak for approximately five seconds on each side. Arrange the bread so that both sides are covered in almonds, and then press the almonds into the sides.
- After placing the bread in the melted butter, grill it for approximately two to three minutes on each side until it is browned. Arrange the finished bread on a baking sheet that has not been greased. After melting the remaining butter in the skillet, proceed to do the same thing with the remaining bread slices.
- Grilled bread should be baked in the oven for eight to ten minutes, or until it is completely cooked through. The honey mixture can be heated on the stove top or in the microwave, depending on your preference. The slices of french toast should be served with a dollop of ricotta and honey on individual plates.
