Zucchini Oatmeal Chocolate Chip Cookies Recipe

If you have too many zucchini this summer, try these soft and chewy Zucchini Oatmeal Chocolate Chip Cookies.  

INGREDIENTS

– 1/2 cup unsalted butter – 1 cup packed light brown sugar – 1/4 cup sugar – 2 large egg – 2 teaspoons vanilla extract – 1 1/2 cups all-purpose flour – 1 teaspoon baking soda – 1 teaspoon ground cinnamon – 1/2 teaspoon kosher salt – 3 cups oat – 1 cup chocolate chip – 1 cup grated, strained zucchini

Heat the oven to 350°F. Prepare two baking sheets with parchment. Beat the butter, brown sugar, and sugar on medium speed in a stand mixer with the paddle attachment for 2 minutes until light and fluffy. Beat in eggs and vanilla.

Mix flour, baking soda, cinnamon, and salt in a small basin.  Beat the flour mixture in the stand mixer until incorporated. Beat in the oats, zucchini and chocolate chips.

Step 2

Place 2-tablespoon scoops of batter on baking sheets, 2 inches apart, using an ice cream scoop or two spoons.

Step 3

Bake cookies for 10–12 minutes. The cookies should cool for 2 minutes on the baking sheet before transferring them to a rack to finish cooling.
