If you have too many zucchini this summer, try these soft and chewy Zucchini Oatmeal Chocolate Chip Cookies.
INGREDIENTS
– 1/2 cup unsalted butter– 1 cup packed light brown sugar– 1/4 cup sugar– 2 large egg– 2 teaspoons vanilla extract– 1 1/2 cups all-purpose flour– 1 teaspoon baking soda– 1 teaspoon ground cinnamon– 1/2 teaspoon kosher salt– 3 cups oat– 1 cup chocolate chip– 1 cup grated, strained zucchini
Heat the oven to 350°F. Prepare two baking sheets with parchment. Beat the butter, brown sugar, and sugar on medium speed in a stand mixer with the paddle attachment for 2 minutes until light and fluffy. Beat in eggs and vanilla.

INSTRUCTIONS
Mix flour, baking soda, cinnamon, and salt in a small basin. Beat the flour mixture in the stand mixer until incorporated. Beat in the oats, zucchini and chocolate chips.
Step 2
Place 2-tablespoon scoops of batter on baking sheets, 2 inches apart, using an ice cream scoop or two spoons.
Step 3
Bake cookies for 10–12 minutes. The cookies should cool for 2 minutes on the baking sheet before transferring them to a rack to finish cooling.
