Stuffed Jalapeño Popper Chicken, a staple snack, is elevated with a flavorful blend of sautéed jalapeños, cream cheese, cheddar cheese, garlic, and bacon.
INGREDIENTS
– 6 slices uncooked bacon, cut into 1/2-inch piece– 2 large jalapeños, stemmed, seeded and diced– 3 scallions, green and white parts divided– 2 cloves garlic, minced– 4 oz. cream cheese, at room temp– 1/2 cup shredded sharp cheddar cheese– 4 medium chicken breast– 1 cup Panko breadcrumb– Vegetable oil, for cooking
Place bacon in a large skillet over medium-low heat. Stir occasionally until bacon fries and fat renders. A slotted spoon removes bacon to a medium bowl, leaving 2 tablespoons skillet drippings.

Add jalapeños and stir for 2 minutes. Add chopped garlic and white onions to skillet. Stir garlic for 2 minutes to fragrant. Add the jalapeño mixture to the bowl with the bacon.

Basin with cheddar and cream cheese. Without cutting each chicken breast, cut a longitudinal pocket. Press the edges of chicken breasts to seal the jalapeño filling.
Step 3
Bread the stuffed chicken breasts on all sides in a large shallow bowl. Preheat the oven to 350°F. Parchment baking sheets. Heat vegetable oil in a large skillet on medium-high.
Step 4
Pan-sear two chicken breasts for 3 minutes on each side, then transfer to the baking sheet. Bake chicken breasts 10–15 minutes at 165°F. Remove chicken breasts from oven. Garnish chicken with green scallions before serving.
