Pumpkin Spice Pretzel Bites Recipe

A popular recipe for pillowy Pumpkin Spice Pretzel Bites great for dipping in whipped cream or caramel sauce adds a fall touch to a snack favourite.  

INGREDIENTS

FOR THE PRETZEL BITES: – 1 1/2 cupwarm (110-115°F) water
 – 1 Tablespoonsugar
 – 2 teaspoons pumpkin pie spice – 1 (1/4-ounce)package active dry yeast
 – 4 1/2 cups all-purpose flour – 2 teaspoons kosher salt – 4 Tablespoons unsalted butter, melted – Vegetable oil – 2/3 cup baking soda – 1 large egg yolk beaten with 1 Tablespoon water FOR THE PUMPKIN SPICE COATING: – 1/2 cup sugar – 1 Tablespoon pumpkin pie spice – 4 Tablespoons unsalted butter, melted

Mix sugar, pumpkin pie spice, and water in a dough hook-equipped stand mixer. Wait 5–10 minutes for yeast foam. Stir flour, salt, and butter in bowl on low.  

Step 1

INSTRUCTIONS

Medium-speed Knead dough for 3 minutes until smooth and pulling away from bowl. Take dough from bowl. Wash and oil the dough, then return it to the bowl. For an hour, leave the plastic-wrapped bowl in a warm, dark place to double.  

Step 2

Preheat oven to 450°F and place racks in middle two places. Lightly oil two parchment-lined baking sheets. In a large, heavy-bottomed stock pot, boil 10 cups water and baking soda.  

Step 3

Divide the dough into 6 pieces on your work surface. Skip flouring your worktop. Cut each 1-inch rope pretzel into 1-inch bites. Add parts to boiling baking soda mixture in batches for 30 seconds, then place on oiled baking pans.  

Step 4

Egg wash and bake bites 10–12 minutes, flipping pans halfway. Remove soft pretzels from oven. Cool 5 minutes, then coat (recipe).  

Step 5

MAKE THE PUMPKIN SPICE COATING:- Pour melted butter into a large basin. Whisk sugar and pumpkin pie spice in a large bowl.  

Step 6

Dip some pretzel bites in the melted butter and add them to the pumpkin spice concoction in batches. Toss to blend. Repeat coating the remaining pretzel bites and serve.
