Red Velvet Brookies Recipe

Half red velvet brownie, half chocolate chip cookie, these Red Velvet Brookies are the perfect dessert! Most importantly, they're rich, fudgy, and created with pantry staples.   

INGREDIENTS

FOR THE COOKIE BATTER: – Cooking spray – 2/3 cup unsalted butter, at room temp – 1 1/2 cups packed light brown sugar – 1 cup white sugar – 2 teaspoons vanilla extract – 1/2 teaspoon kosher salt – 3 large egg – 3 cups all-purpose flour – 1 teaspoon baking powder – 1 cup chocolate chip FOR THE RED VELVET BROWNIE BATTER: – 1/2 cup unsalted butter, melted – 1 cup white sugar – 1/4 cup unsweetened cocoa powder – 1/2 teaspoon vanilla extract – 1 Tablespoon red food coloring – 1/2 teaspoon white vinegar – 2 large egg – 1/8 teaspoon kosher salt – 3/4 cup all-purpose flour 

MAKE THE COOKIE BATTER: Heat the oven to 350°F. Cover a 13x9-inch baking pan with parchment paper, allowing overhang on the longer sides. Grease with frying spray.  

Step 1

INSTRUCTIONS

Mix the butter, brown sugar, and white sugar in a stand mixer with the paddle attachment for 2 minutes until light and frothy, scraping down the sides.  

Step 2

Beat in vanilla and salt. Beat each egg as it is added. Beat in the flour and baking powder until mixed, then the chocolate chunks. Reserve batter.  

Step 3

MAKE THE RED VELVET BROWNIE BATTER: Mix melted butter, sugar, cocoa powder, vanilla essence, red food colouring, white vinegar, eggs, and salt in a large bowl.   

Step 4

Mix in flour just until mixed.  Use scoops of cookie batter or red velvet brownie batter in the baking pan.   

Step 5

Bake the brookies for 30–40 minutes until the cookie dough is brown and the mixtures are set.  Sprinkle sea salt on them immediately after baking. Let the brookies cool completely in the pan before slicing and serving.
