Quick Shrimp Scampi with Linguine is an easy meal that you can use on busy weeknights or for a fancy dinner party on the weekend.
INGREDIENTS
– 12 oz. uncooked linguine pasta– 1/4 cup extra virgin olive oil, plus more for garnishing– 1 cup cherry tomatoes, halved– 4 cloves garlic, minced– 1/4 teaspoon crushed red chili flakes (optional)– 1 pound medium shrimp, peeled and de-veined– 1 Tablespoon lemon zest– 1/2 cup white wine– 1/2 cup parsley, chopped– 1 Tablespoon lemon juice
Bring a large saucepan of salted water to boil. Add linguine and simmer for 10 minutes until al dente. While pasta cooks, create sauce.
Step 1
INSTRUCTIONS
Add olive oil to a large sauté pan over medium-high heat. When oil is heated, add cherry tomatoes and stir for 2 minutes. Stir in the garlic and chilli flakes for 2 minutes until golden brown and aromatic.
Step 2
Cook the prawns for 3 minutes, flipping once, until pink and cooked through. Cook white wine until half-reduced.
Step 3
Stir in lemon zest, juice, parsley, ½ teaspoon salt, and ¼ teaspoon pepper. With tongs, transfer pasta from water to sauté pan and coat. Pour olive oil over pasta and serve.
