My favourite One-Pot Gnocchi with Sausage dish packs flavour without the effort. The 20-minute meal has pillowy store-bought gnocchi and chopped fresh greens mixed with citrus.
INGREDIENTS
– 1 Tablespoon extra-virgin olive oil– 8 oz. Italian sausage, casings removed– 1 pound store-bought gnocchi– 2 cups chicken stock– 3 cups chopped kale– 1/3 cup grated Parmesan cheese, plus more for garnishing– 1 Tablespoon fresh lemon juice
Add olive oil to a big heavy-bottomed stock pot or Dutch oven over medium heat. The banger should be thoroughly cooked in 5 minutes, broken apart with a spatula.
Step 1
INSTRUCTIONS
Put the banger in a bowl with a slotted spoon. Pour gnocchi into the pot and stir for 1 minute. Add the chicken stock and bring to a boil, then reduce to a simmer for 2 minutes to tenderise the gnocchi.
Step 2
Add the greens and simmer for 2 minutes until soft and wilted. Parmesan cheese and cooked sausage should be mixed in.
Step 3
Stir lemon juice into the pot after turning off the heat. Sprinkle Parmesan over and serve.
