Guacamole Deviled Eggs Recipe

Two tasty snacks come together in this recipe for Guacamole Deviled Eggs, which are topped with taco sauce.  

INGREDIENTS

– 6 large egg – 1 small avocado, peeled, pitted and diced – 1 Tablespoon fresh lime juice – 2 Tablespoons mayonnaise – 2 Tablespoons small diced red onion – 1 Tablespoon chopped fresh cilantro – Crumbled cotija cheese, for garnishing – Taco seasoning, for garnishing

Cover the eggs in a medium sauce saucepan with water. Water should boil in the sauce saucepan over medium-high heat.   

Step 1

INSTRUCTIONS

Cover the sauce pot and turn off the heat after the water boils. Let eggs soak for 11 minutes, then rinse with cold water. After cooling, peel and cut the eggs in half lengthwise.  

Step 2

Set aside the halved egg whites and place the yolks in a small basin. Mash the avocado, lime juice, and mayonnaise in the bowl. Stir in the red onion and cilantro, then taste and add salt and pepper.  

Step 3

Place halved egg whites on a platter. Fill each egg white with avocado mixture. Crumble cotija cheese and sprinkle taco spice on top before serving.
