Easy Homemade Soft Pretzels Recipe

– 1 1/2 cups warm (110 to 115ºF) water – 1 Tablespoon white sugar – 2 teaspoons kosher salt – 1 (1/4-oz.) package active dry yeast – 4 1/2 cups all-purpose flour – 4 Tablespoons unsalted butter, melted – Vegetable oil, for greasing – 2/3 cup baking soda – 1 large egg yolk beaten with 1 Tablespoon water – Pretzel salt or kosher salt, for topping (optional)

Mix hot water, sugar, and salt in a dough hook-equipped stand mixer. Sprinkle yeast over the mixture and let it sit for 7–10 minutes to develop and puff up.

Stir flour and melted butter into the bowl on low speed until mixed. Mix on medium speed for 4–5 minutes until the dough is smooth and pulls away from the bowl.  

Step 2

Grease a big bowl with oil. Wrap the dough in plastic after transferring it from the stand mixer bowl to the oiled bowl. Put the bowl in a warm, dark location for an hour to double the dough.   

Step 3

Start by preheating the oven to 450ºF. Line two sheet trays with parchment paper and lightly oil them. Mix 10 cups of water and baking soda in a large, heavy-bottom stock pot or Dutch oven over medium-high heat.  

Step 4

Bring the mixture to boil. Divide the dough into 10 equal pieces on your work area while the water boils.  

Step 5

Roll each dough piece into a 24-inch rope. Turn the ropes into pretzels and return them to the cookie sheets.

Step 6

One by one, plunge pretzels into hot water for 30 seconds. Return them to the cookie sheet after removing them from the water with a big slotted spoon.  

Step 7

Egg wash and salt the pretzels (optional). Bake pretzels 12–14 minutes until dark-golden brown. Serve them after cooling from the oven.
