Cinnamon Roll Cookies Recipe

This Cinnamon Roll Cookies recipe adds warming spices and quick-fix icing to sugar cookies.  

INGREDIENTS

FOR THE COOKIES: – 1 cup unsalted butter, softened – 1 1/3 cups sugar – 2 large egg – 2 teaspoons vanilla extract – 3 cups all-purpose flour – 1/2 teaspoon baking powder – 1/2 teaspoon kosher salt FOR THE FILLING: – 1/4 cup sugar – 1 Tablespoon ground cinnamon  – 2 Tablespoons unsalted butter, melted and cooled FOR THE ICING: – 1 cup confectioners’ sugar, sifted – 1 Tablespoon unsalted butter, melted  – 2 Tablespoons whole milk

MAKE THE COOKIES:- Use a paddle attachment to cream butter for 2 minutes in a stand mixer basin. Two more minutes of beating in the sugar will make it frothy. After adding the eggs one at a time, beat in the vanilla, scraping down the sides.  

Step 1

INSTRUCTIONS

Beat in flour, baking powder, and salt until mixed. After mixing, divide the dough in half and form each half into a flat square. Cover each square with plastic wrap and chill for 1 hour.  

Step 2

Put each dough piece between two parchment sheets. Roll each dough piece into a 14x11-inch rectangle using a rolling pin. Squaring the bottom.  

Step 3

MAKE THE FILLING:- Mix sugar and cinnamon in a small bowl. Sprinkle cinnamon-sugar mixture evenly over each dough piece after brushing with half the melted butter.  

Step 4

Roll each dough piece into a tight log from the longer end of the rectangle. Refrigerate each log for 2 hours to 2 days wrapped in plastic.  

Step 5

Heat the oven to 350°F. Prepare two baking sheets with parchment. Cut dough logs into 1/4-inch circles. Put the rounds on the baking sheets at least 2 inches apart.  

Step 6

Bake the cookies 9–11 minutes till pale golden. Remove from the oven and cool for 5 minutes on the baking sheets before moving to a rack to finish cooling. While cookies cool, create icing.  

Step 7

MAKE THE ICING:- Whisk confectioners' sugar, melted butter, and milk in a medium bowl until smooth. Before serving, drizzle frosting over thoroughly cooled cookies and let set for 10 minutes.
