Christmas Monster Cookies Recipe

This recipe for Christmas Monster Cookies, which are classic (and don't need flour!) cookies, gets a holiday boost with green, red, and white M&Ms.  

INGREDIENTS

– 1/2 cup unsalted butter, softened – 1 cup sugar – 1 cup packed light brown sugar – 3 large egg – 1 1/2 cups peanut butter (smooth or chunky) – 2 1/2 teaspoons vanilla extract – 2 teaspoons baking soda – 1/2 teaspoon kosher salt – 4 1/2 cups oats (old fashioned or quick-cooking) – 1 cup Christmas M&M – 1/2 cup mini chocolate chip

Heat the oven to 350°F. Prepare two baking sheets with parchment. Cream the butter, sugar, and brown sugar in a stand mixer basin with the paddle attachment for 2 minutes until light and fluffy, scraping down the sides.

Beat each egg as it is added. After adding peanut butter, vanilla baking soda, and salt, add oats. Beat in Christmas M&Ms and small chocolate chips until mixed.  

Step 2

Use an ice cream scoop or two small spoons to scoop 2- to 3-tablespoon mounds of dough onto baking sheets, spreading them at least 2 inches apart.  

Step 3

Bake the cookies until the centres are barely set, 12–15 minutes. Let the cookies cool on the baking pans for 5 minutes before transferring them to a rack to finish cooling.
