There is a quick and easy recipe for Cheesy Asparagus Pesto Pasta that only needs nine ingredients. It takes a traditional Italian sauce and adds healthy asparagus to it.
INGREDIENTS
– 1 pound asparagus, ends trimmed– 1/4 cup pine nuts, toasted– 1/3 cup shredded Parmesan cheese, plus more for serving– 2 cloves garlic, roughly chopped– 1 Tablespoon fresh lemon juice– 1/2 cup extra-virgin olive oil– 1 pound uncooked pasta of choice
Bring a large saucepan of salted water to boil. Place 2-inch asparagus pieces in boiling water for 1 minute, then drain and rinse under cold water. Keep the salted water boiling.

Keep some asparagus tips for garnish. Mix the remaining asparagus, toasted pine nuts, Parmesan cheese, garlic, lemon juice, salt, and pepper in a blender.

Once the components are combined for 10–15 seconds, slowly add the olive oil while the blender is running, scraping down the sides as needed. Add pesto to a bowl and season with salt and pepper.

In boiling salted water, cook pasta until al dente. Toss the pasta, pesto, and saved asparagus spears in a large bowl. Sprinkle Parmesan over and serve.
