Baked Corn and Zucchini Fritters (Oven or Air Fryer) Recipe

Fritters made with this recipe for Baked Corn and Zucchini can be made in the oven or an air fryer in just a few minutes. They will be hot and crispy.  

INGREDIENTS

– 2 medium zucchini – 2 cups fresh, frozen (thawed) or canned (drained) corn kernel – 1/4 cup chopped scallions, green and white part – 1 1/4 cups all-purpose flour – 2 teaspoons garlic powder – 1 teaspoon baking powder – 2 large eggs, lightly beaten – 1/2 cup heavy cream – Cooking Spray

Grate zucchini using a box grater's small hole and place in a kitchen towel. Drain as much moisture as possible.   

Step 1

INSTRUCTIONS

Mix grated zucchini, corn kernels, scallions, flour, baking powder, ½ teaspoon salt, and ¼ teaspoon pepper in a large bowl. Add eggs and heavy cream and mix well.  

Step 2

TO COOK THE FRITTERS IN THE OVEN:- Heat the oven to 400°F. Prepare two baking sheets with parchment. Form patties from 3-tablespoon batter. Place the mounds on baking sheets at least 2 inches apart.

Step 3

Spray fritters with cooking spray and bake for 15 minutes until golden brown and slightly crispy. Salt and serve them right after baking.  

Step 4

TO COOK THE FRITTERS IN AN AIR FRYER:- Start the air fryer at 360°F.  Form 3-tablespoon patties from batter, flattening slightly. Place a single layer of fritters in the air fryer basket and spray their tops with cooking spray.  

Step 5

Air-fry fritters for 10–12 minutes until golden brown and crispy. Salt them after air-frying and serve.
