Preheat oven to 425℉ (220℃).Cut ½ inch off the bottom of each broccolini stem and discard. Split a broccolini stem lengthwise, reserving the leaves.

Quarter thick stems. Slim stems don't need cutting. This cooks broccolini evenly and yields more pieces.
