Put whole sweet potato in pot with water; boil. Boil until fork-tender, 40–50 minutes. Start with a 350°F oven.

Step 1

Run cold water over sweet potato from pot. Peel and discard skin.

Break sweet potato flesh into a bowl. Mix butter with an electric mixer until well combined.

Add sugar, milk, eggs, nutmeg, cinnamon, and vanilla; beat on medium speed until smooth. Pour filling into unbaked pie crust.
