– ½ cup margarine, softened – ½ cup peanut butter – ½ cup white sugar – ½ cup packed brown sugar – 1 large egg – ½ teaspoon vanilla extract – 1 ¾ cups all-purpose flour – ¾ teaspoon baking soda – ¼ teaspoon salt

Start with a 350°F oven. 2 baking sheets greased. In a large bowl, beat margarine, peanut butter, sugars, egg, and vanilla with an electric mixer until fluffy.

Step 1

Add flour, baking soda, and salt and mix well. Refrigerate dough for 15 minutes.

Step 2

Roll chilled dough into walnut-sized balls and place 2 inches apart on baking sheets.

Step 3

Bake 7–10 minutes in preheated oven until edges are lightly browned. Do not overbake.

Cool cookies on a wire rack and store in an airtight plastic container to keep soft.
