Soft & Chewy Apple Cookies Recipe

Freeze-dried apple and cinnamon cookies are soft and chewy. Roll these crinkle apple cookies in sugar or glaze them with apple cider. 

– 170g or ¾ cup butter unsalted – 150g or ¾ cup brown sugar – 50g or ¼ cup granulated sugar – 1 teaspoon baking soda – 2 teaspoons ground cinnamon – ¾ tsp fine sea salt – 1-2 teaspoons pure vanilla extract – 1 large egg – 250g or 2 cups all purpose flour – 70 g or two bags of freeze dried apples use the full amount for a strong apple flavor, use 35-50g for a more subtle flavor

INSTRUCTION

Put butter in a heatproof bowl. One minute in the microwave will almost melt it. Whisk in sugars for 30 seconds.

STEP  1 .

 Whisk in the soda, spices, salt, and vanilla. Crack in the egg and whisk for 60 seconds to blend it and make the mix shiny.

STEP 2.

Process apples into powder in a food processor. Mix the flour and ground apples with a rubber spatula. Heat the oven to 350 F. Place parchment on two greased baking sheets.

STEP 3.

Scoop 2 tablespoons of dough, roll it between your palms to smooth the tops, and place them 2 inches apart on the baking sheet.

STEP 4.

For a spiced sugar topping, mix ⅓ cup granulated sugar (organic is best due to larger granules) with 1 tsp cinnamon, ½ tsp nutmeg, and allspice.

STEP 5.

After 12 minutes, the cookies should have golden brown edges, puffed domes, and cracked in the oven. Use the bottom of a measuring cup to press them down immediately after baking.

STEP 6.

Before dipping cookies in glaze, let them cool completely. Glaze instructions are above the recipe in “options for topping the cookies”.
