Overnight French Toast Bake Recipe

For an easy breakfast, try this family favourite recipe for Overnight French Toast Bake. It's made with coconut milk, fresh fruit, and warming spices.  

INGREDIENTS

– 1 Tablespoon unsalted butter – 1 loaf sourdough bread, cut into 1-inch cubes (about 12 cups) – 1 (13.5-oz.) can coconut milk – 1/2 cup orange juice – 2 teaspoons orange zest – 6 large egg – 1/4 cup white sugar – 1 teaspoon ground cinnamon  – 2 teaspoons vanilla extract – 1/4 teaspoon salt – Confectioners’ sugar, for topping – 2 medium oranges, for topping  – Maple syrup, for topping

Grease a 13x9-inch baking pan with butter. Spread the cubed bread evenly on the oiled baking pan. Mix coconut milk, orange juice, eggs, sugar, cinnamon, vanilla essence, and salt in a large bowl.

Pour mixture on bread.  Wrap the pan in greased foil and refrigerate overnight. Start baking by preheating the oven to 375°F.   

Step 2

French toast from the fridge should be baked for 35 minutes under foil. Remove the foil and bake for 20 minutes until golden brown, puffy, and done. French toast is prone to collapse.  

Step 3

Peel and segment oranges. Sprinkle confectioners' sugar on French toast, add orange segments and maple syrup, and serve.
