Orange Rolls Recipe

Orange Roll Dough – 30g or ¼ cup all purpose or bread flour – 120g or ½ cup water – 7g or 1 packet instant yeast – 60g or ¼ cup warm water – 1 tablespoon granulated sugar – 520 g or 4 cups all purpose flour – 125g or ½ cup greek yogurt vanilla or plain – 50g or ¼ cup canola or other flavorless oil – 50g granulated sugar optional, sweetens the dough – 175g or scant ¾ cup freshly squeezed orange juice – Zest of two large orange – 1-2 teaspoons pure vanilla extract or paste – ½ tsp fine sea salt Brown Sugar Orange Filling – 145g or ⅔ cups brown sugar – 75g or ⅓ cup butter softened, salted or unsalted – Zest of 2 orange – 8g or 1 tablespoon all purpose flour – Pinch fine sea salt – 120g or ½ cup heavy cream Cream Cheese Orange Glaze – 2 tablespoons cream cheese – 2-4 tablespoons fresh orange juice – 195g or 1 ½ cups organic powdered sugar – 1 tsp pure vanilla extract or paste – Pinch fine sea salt

INSTRUCTION

Blend 1/2 cup water and 1/4 cup flour in a small pot. A thick paste forms when mixed on low. Reserve after cooking. Add 1/4 cup warm water,

STEP  1 .

yeast, and sugar to a dough hook-equipped stand mixer bowl. Let mixture foam for a few minutes. Add flour to yeast, then dough and roux.

STEP 2.

Slowly knead for 7-10 minutes to clean the bowl. In an oiled bowl, coat, cover, and rise 2-3 hours until almost doubled. Warm kitchens: 2–1.5 hours. Soften butter when rising.

STEP 3.

After nearly doubling, punch and flour the dough. Cream softened butter, brown sugar, and orange zest. Tbsp flour, pinch salt.

STEP 4.

A 12x16-inch dough rectangle with a half-inch border should be filled. Log dough, ending with the unfilled side. Pan 13x9" grease before baking.

STEP 5.

Cut the log into 11 large 1" rolls in rows of 2,1,2,1,2,1 with a bread knife or unwaxed dental floss. Under a tea towel, let the dough rise 45 minutes until it leaves a pan indentation.

STEP 6.

Heat the oven to 350 F. Pour heavy cream around rolls before baking. Bake 30 minutes until golden. Your thermometer should read 190 in the center of the rolls.

STEP 7.

Beat cream cheese and orange juice. Smoothly mix vanilla, salt, and powdered sugar. If icing is thick, add juice. Too thin? Add powdered sugar. Serve glazed rolls.
