Mom's Cottage Cheese Lasagna Recipe

The secret ingredient, cottage cheese, meat, Italian sausage, and three cheeses make this creamy, saucy lasagna delicious!

INGREDIENT

– 1 lb. ground beef – 1 lb. Italian sausage – 1 yellow onion, chopped – 3 cloves garlic, minced – Pinch red pepper flakes (optional) – 24 ounce jar your favorite pasta sauce (I like a marinara) – 1 teaspoon oregano – 1/2 teaspoon black pepper – 1/2 teaspoon Kosher salt For the filling: – 1 1/2 cups full fat small curd cottage cheese – 1 egg – 1/2 cup shredded Parmesan cheese – 1 teaspoon dried parsley – 1/2 teaspoon salt – 1/2 teaspoon black pepper For the lasagna: – 12 lasagna noodle – 3 cups shredded mozzarella cheese – 2 cups shredded baby Swiss cheese

INSTRUCTION

Preheat oven to 350. Spray-bake 9x13.

Step 1

For the sauce and noodles:  Stir ground beef, Italian sausage, and onion in a large pan. Break meat apart with a spatula over medium-high heat until pink is gone.

Step 2

Put garlic, spaghetti sauce, oregano, pepper, and salt in fat-free pan. Lower heat after heating. Simmer sauce while cooking.

Step 3

In a big saucepan, boil water with salt and oil to avoid sticky noodles. Cook noodles 2 minutes less than manufacturer suggests in pot. Drain, foil, repurpose noodles.

Step 4

For the filling:  Mix cottage cheese, egg, Parmesan, parsley, salt, and pepper in a medium bowl. Set aside.

Step 5

To layer:   Light beef sauce on pan bottom. Put 4 lengthwise noodles in pan. Go with 4 noodles and 1/2 cheese. Half-cover noodles in sauce.

Step 6

Add 3 noodles to cottage cheese. Mix in remaining sauce and cheese. Bake cheese for 35-40 minutes in preheated oven to melt and brown.
