MILK BREAD STICKY PECAN BUNS RECIPE

Pillowy milk bread rolls with brown butter, brown sugar, and ground cinnamon hold melty salted vanilla caramel with pecans.

For the Dough: – ⅔ cup warm water – ⅔ cup warm milk – 2 teaspoons active dry yeast – 2 tablespoons white sugar – 1 large egg, beaten – 6 tablespoons unsalted butter, melted – 4 cups all-purpose flour, or more as needed – 1 ½ teaspoons fine salt For the Sticky Topping: – ½ cup packed light brown sugar – ¼ cup white sugar – 1 pinch salt – 6 tablespoons unsalted butter, melted – 3 tablespoons water – 1 cup chopped toasted pecan Sugar Filling: – ¾ cup packed light brown sugar – 1 teaspoon ground cinnamon

Start with warm milk and water in a bowl. frothing takes 10 min. Yeast, sugar, egg, and melted butter make dough. Before adding salt and 75% flour, whisk.

STEP  1 .

Flour-sticky dough. 5 minutes mixer kneading. Cover and warm 1 hour to double. Baking rising dough at 375°F (190°C). Butter a 9x13 metal pan.

STEP 2.

Salt, melted butter, brown and white sugar, water topping. Blend well. Cover pan bottom evenly. Evenly add pecans. Hold until needed. Mix brown sugar and cinnamon to fill. Hold until needed.

STEP 3.

Dough on lightly floured surface. Use lightly floured hands to stretch the dough into an 18x15-inch rectangle. Cinnamon-sugar mixture evenly covers dough to edges, leaving 2-inch border.

STEP 4.

Insert sugar mixture into dough. From the nearest edge, roll the dough into a cylinder with lightly floured hands. Stop rolling tightly. Cylinder seam-side down should be even.

STEP 5.

Place a string or floss under the dough at the first knife mark. Cross string ends over top and pull oppositely to cut dough. Use leftover dough.

STEP 6.

Put 3 rows of 4 buns in the topped pan. Turn buns doughier side up in pan. Under loose foil, buns pan-rise in 45–60 minutes. Save foil for late baking.

STEP 7.

Baking buns for 35 minutes until center instant-read thermometer reads 200 degrees F. The last 5–10 minutes may brown the tops too much, so foil the pan.

STEP 8.

Remove from oven and cool 5 minutes on wire rack. Carefully transfer pan to platter. Remove sticky pan topping. Cool and serve warm or room temperature.
