Mason Jar Microwave Lemon Curd Recipe

Easy and quick lemon curd made in a small batch in the microwave! One cup of lemon curd can be obtained from this recipe, which is prepared in a mason jar and heated in the microwave.

– ⅓ cup or 66g granulated sugar – zest of 1-3 lemons depending on how much effort you want to put into it – ⅓ cup or 80g freshly squeezed lemon juice must be freshly squeezed – 2 large egg – 2 ½ tablespoons butter cold, salted or unsalted

INSTRUCTION

For this recipe, you'll need a 16-ounce wide-mouth mason jar or a heatproof bowl. Pour sugar into jar or bowl and zest lemon(s) over it. A fork stirs it.

STEP  1 .

Lemon juice and sugar should be whisked with a fork. Crack the eggs and beat with a fork until nearly all egg white bits are gone.

STEP 2.

The jar should be placed in the microwave at a power setting of one hundred percent for thirty seconds.

STEP 3.

There will be white bits on top after 30 seconds. With the fork, mix the curd. Bring it back to the microwave and heat it for some more time.

STEP 4.

More white bits will appear; whisk with a fork and microwave 30 seconds. If it looks thick after mixing and the temperature is 160, skip the fourth 30 seconds!

STEP 5.

When you do it for the fourth time, the curd should be thick and have what looks like foam on top. Thoroughly mix the curd.

STEP 6.

Place butter in a small bowl with a sieve. Press the curd through the sieve to remove bits. Scrub the sieve bottom.

STEP 7.

Stir until butter is melted and curd is glossy and silky. Keep in an airtight container in the fridge.
