Natural, rustic applesauce cooked in under 20 minutes. Try this chunky applesauce on oatmeal or pancakes for breakfast, yoghurt and granola for a snack, or ice cream for dessert. It tastes like apple pie filling.
– 3 Gala apples (or another variety of sweet red apple) – 3 Granny Smith or pippin apple – ¼ cup plus 2 tablespoons real maple syrup* – 1 tablespoon ground cinnamon – 1 tablespoon fresh lemon juice (or more to taste) – dash of sea salt
Peel, core, and cut apples into 2-inch pieces. Add apple chunks, maple syrup, cinnamon, and lemon juice to a heavy, nonreactive Dutch oven or saucepan over medium heat.
Cover and simmer for 12 minutes to soften apples. Continue cooking, stirring occasionally to break up larger chunks, until the apples are soft but still have texture (5–10 minutes).
Turn off heat and add maple syrup, cinnamon, or lemon juice to taste. Serve warm or chilled; refrigerate after cooling to room temperature.
