Lime curd that is silky smooth and sharp, and is made with whole eggs for a taste that is brighter and more vibrant.
– 100g ½ cup granulated sugar– Zest of 4 persian lime– 3 large egg– 120g or ½ cup freshly squeezed lime juice– Pinch fine sea salt– 57g or ¼ cup butter cold

Put the butter into a bowl after cutting it up. Place a sieve with a fine mesh over it. Put the sugar in a little pot. Sprinkle the lime zest on top of the sugar
STEP 1 .
And then rub it in your hands for a few minutes, until the juices come out and the mixture feels like wet sand.
STEP 2.
Mix the eggs, sugar, and salt together with a fork until everything is well mixed. Add the lime juice, mix it in with a whisk, and then set the pan over medium-low heat.
STEP 3.
As you cook, whisk and stir the curd a lot until it gets thick enough to cover the back of a spoon. Using the sieve, pour the curd into the bowl with the butter.
STEP 4.
To get as much curd as possible, press it through and scrape the bottom. Mix the curd well with the butter until it melts.
STEP 5.
In order to achieve a more green hue in lime curd, you can incorporate a drop of green food coloring into the mixture.
STEP 6.
Maintain in the refrigerator in a container that does not allow air to enter. It will continue for a period of two weeks.
