Homemade Soft Pretzel Twists Recipe

Soft pretzel twists made at home are the king of carbs! For the best burger ever, dip and dunk in cheese sauce or slice and stuff. 

INGREDIENTS

– 1 1/2 cups warm (110-115°F) water – 1 Tablespoon sugar – 2 teaspoons kosher salt, plus more for topping – 1 (1/4-ounce) package active dry yeast – 4 1/2 cups all-purpose flour – 4 Tablespoons unsalted butter, melted – Vegetable oil – 10 cups water – 2/3 cup baking soda – 1 large egg yolk beaten with 1 Tablespoon water

Mix water, sugar, and kosher salt in a stand mixer. Leave yeast on top for 5 minutes to foam. Mix flour and butter on low with a stand mixer hook.

Knead dough for 4–5 minutes on medium speed until smooth and pulling away from basin. Remove dough from bowl. Clean and vegetable-oil the basin.  

Step 2

Back in the basin, cover the dough with plastic wrap and let it rise for an hour until doubled. My video shows bread dryer-proofing. Set the oven to 450ºF and place the racks in the middle two positions.  

Step 3

Cover two sheet pans with parchment. Mix 10 cups water and baking soda in an 8-quart pot. Bring mixture to boil.  

Step 4

Divide the dough into 12 equal pieces on your work area while the water boils. Kelly's Notes advises against flouring your work surface. Roll each dough piece into an 18- to 20-inch rope with firm pressure.   

Step 5

Fold and twist each rope in half, attaching ends. Wrap the bottom around the top, feed it through, and press. See images for guidance. Cookie sheet twists.  

Step 6

Gently place each twist in boiling water for 30 seconds. Remove each twist from the water and place it on the cookie sheet with a large slotted spoon or spatula. Kosher salt optional. 

Step 7

Brush egg yolk wash on twist tops. Flip the pans halfway through baking the twists for 12–14 minutes until golden brown. Serve after 5 minutes of oven cooling.
