Fruit and Cream Cheese Breakfast Pastries Recipe

You can make your breakfast game better with this quick and easy recipe for Fruit and Cream Cheese Breakfast Pastries. You can use any fruit you like on top of them.  

INGREDIENTS

– 6 ounces cream cheese, at room temp – 2 Tablespoons sugar – 2 teaspoons lemon juice – 1 teaspoon lemon zest – 1 teaspoon vanilla extract – 1 (17.3-oz.) package frozen puff pastry (2 sheets), thawed – 1 1/2 cups fruit (See Kelly’s Note) – 1 large egg – Sanding sugar (optional)

Preheat oven to 400°F and line two baking sheets with parchment or Silpats. Mix cream cheese, sugar, lemon juice, zest, and vanilla extract in a stand mixer bowl using the paddle attachment until smooth.  

Step 1

On a lightly floured board, unfold puff pastry sheets. Roll pastry lightly with a rolling pin to seal perforations. Use a 4-inch cookie cutter or glass to cut four circles from each puff pastry sheet.  

Step 2

Put four pastry circles 2 inches apart on each baking sheet. Fork-prick each pastry's middle after lightly scoring a 1/4-inch circle. Cover each pastry with cream cheese and fruit.  

Step 3

Mix egg and 1 tablespoon water in a small bowl. Optional egg wash and sanding sugar on pastry edges. Bake the pastries 15–18 minutes until brown and fluffy. After 5 minutes on the baking sheets, cool the pastries on a rack.
