Easy Vegan Sheet Pan Pancakes Recipe

Just mix the 8-ingredient batter with pantry staples you probably already have, spread it on a baking sheet, top with whatever you like, and bake for 15 minutes.

Heat the oven to 425F (220C). A 11" x 17" baking sheet lightly greased. (10" x 15" works too).

Step 1

Whisk flour, sugar, baking powder, and salt in a large bowl. Gently mix in plant-based milk, lemon juice, melted vegan butter, and vanilla extract.

Lumpy, bubble-filled batter. This is good—don't overmix! (Big bubbles make fluffy pancakes).

Step 3

Transfer the batter to the baking sheet and spread it evenly with a spatula. Top the pancake with any desired toppings.

Step 4

Bake pancake edges 15 minutes until lightly browned. A light poke reveals a pale-topped pancake. Slice and add maple syrup or other toppings.
