– 1 cup raw walnuts, (or sub roasted unsalted walnuts) – 2 tablespoons ground flax or ground chia – 5 tablespoons warm water – ½ cup vegan butter, (at room temperature) – ¾ cup white sugar – 1 ⅓ cups (11 oz/ 312 g) mashed very ripe banana, (from about 3 medium bananas) – ½ teaspoon vanilla extract – 1 ½ cups all-purpose flour, (see notes for gluten-free) – 1 teaspoon baking soda – ½ teaspoon salt – ½ cup raisins, (or sub vegan chocolate chips)

Preheat oven to 350℉ (180℃). Grease 9.5"x5" loaf pan.

Step 1

Mix flax or chia and warm water in a small bowl. Set aside to thicken.

Mix sugar and vegan butter in a large bowl. Once fluffy, add mashed banana, vanilla, and flax. Mix in all-purpose flour, baking soda, and salt. A lumpy batter. Finally, add walnuts and raisins.

Put batter in loaf pan and spread. Bake the banana bread for 55–65 minutes until it is dark golden and a toothpick inserted comes out clean or with a few moist crumbs.

Cool bread on a wire rack in the pan for 30–60 minutes after baking. Remove the bread from the pan and cool on the wire rack. Slice and serve bread with a serrated knife and gentle sawing.
