Chocolate-Covered Strawberry Brownies Recipe

– Cooking spray – 2 large egg – 1/4 cup vegetable oil – 4 Tablespoons unsalted butter, melted – 2 Tablespoons water – 1 teaspoon vanilla extract – 1 1/4 cups sugar – 3/4 cup all-purpose flour – 2/3 cup cocoa powder – 1/2 cup confectioners’ sugar – 1/2 teaspoon kosher salt – 1/2 cup chocolate chips or chunks  – 3 cups strawberries, stems removed – Chocolate melting wafer

Preheat the oven to 325°F. Prepare an 8-inch square baking pan with parchment and cooking spray. In a large bowl, combine eggs, vegetable oil, melted butter, water, and vanilla.

Mix sugar, flour, cocoa powders, confectioners' sugar, and salt in a medium bowl. Combine dry and wet components.  After mixing in chocolate chips, pour batter into baking pan.

Bake the brownies for 35–40 minutes until the middle is just set and a toothpick comes out clean. Remove brownies from oven and let cool in pan.

After brownies cool, top with cut-side strawberries. After melting chocolate wafers per packet, drip them over strawberries. When firm, slice and serve chocolate drizzle.
