Baked brown sugar cookies with ground sugar cones! These caramel-flavored cookies are great for ice cream sandwiches.
– 200 g or 1 cup brown sugar– ¼ cup granulated sugar– 145 g butter unsalted– 1 large egg plus 1 egg yolk– ¾ tsp fine sea salt– 2 teaspoons vanilla extract– 4 rolled sugar cones ground, 60g– 210 g all purpose flour– ½ tsp baking powder– ½ tsp baking soda if you want extra thin cookies add an extra 1/8 tsp baking soda– ½ cup mini chocolate chips optional

INSTRUCTION
Heat butter in a microwave-safe bowl until almost melted. Add sugars, whisk, and microwave 30 seconds more.
STEP 1 .
Whisk the butter and sugar until the butter doesn't separate, then add the eggs and whisk until the batter is smooth. Whisk in salt, baking soda, powder, and vanilla.
STEP 2.
Stir in flour and ground sugar cones to form a dough. If desired, add chocolate chips and crush two more sugar cones with your hands. Completely fold and cover bowl.
STEP 3.
Refrigerate for 1 hour. Heat the oven to 350 F. Place parchment on two greased cookie sheets. You can portion and bake the cookies as is
STEP 4.
Roll them in granulated sugar mixed with more ground sugar cone, or top them with more chocolate chips.
STEP 5.
Bake for 10 minutes, or longer if your cookies are larger than 1.5 tablespoons. Try lifting the pan and dropping it on the rack to flatten the cookies if you didn't use
STEP 6.
⅛ tsp baking soda for a thinner spread. Before adding ice cream to sandwich, chill cookies completely. They taste great hot from the oven.
