Berry & Citrus Rainbow Pound Cake Recipe

There are five different flavors of pound cake that come together to create a rainbow pound cake. These flavors include raspberry, blueberry, lemon, lime, and mixed berry combinations. 

Pound Cake Recipe – 452g or 2 cups unsalted butter cold is fine – 540g or 2 ½ cups fine granulated sugar – 1 ½ teaspoons fine sea salt – 2 teaspoons pure vanilla extract – 6 large egg – 360g or 1 ½ cups lowfat yogurt – 480g or 4 cups cake flour sifted – 4 teaspoons baking powder Flavoring – Red = 2 tablespoons raspberry powder – Yellow = zest of 1 lemon plus ½ tsp lemon extract – Green = zest of two limes plus ½ tsp lemon extract – Blue = 2 tablespoons blueberry powder – Purple = 1 tablespoon each raspberry and blueberry powder – food gel coloring for each layer Glaze – Zest and Juice of 1 orange – 1 ½ cups powdered sugar – Splash of pure vanilla extract

INSTRUCTION

Half the recipe for a loaf pan or double for a large bundt pan. Grease, flour. Weigh cake batter bowl. Butter melts in big bowl. Sugar is light and creamy

STEP  1 .

 With a hand mixer, whisk, or paddle attachment. Machines take 2 minutes, whisks 4-5. Whisk or blend eggs individually. Turn batter shiny in 3 minutes.

STEP 2.

Combine salt and vanilla. Mix yogurt, flour, and baking powder. Batter 2200g. Five batter bowls (440g).Turn on 350F oven. One bowl has lemon zest, extract, and yellow food gel.

STEP 3.

 Use a tiny rubber spatula. Bowl 2: Mix lime zest, lemon extract, and green food gel. Incorporate. Raspberry, blueberry, and purple food gel, 1 tablespoon in third bowl.

STEP 4.

Use an offset spatula to mix and spread it in the pan. Add 2 tablespoons blueberry powder and blue food gel to the fourth bowl and mix well. Pour over purple batter.

STEP 5.

 Limes fit well. Lemon-using evenly. Last bowl needs 2 tablespoons raspberry powder and red food gel. Mix. Use. An hour or 45 minutes cake. Since darker batter browns more than pound cakes,

STEP 6.

Too-golden cake is fine. Testers judge cake doneness. A few minutes later, place the cake on a cooling rack. Cool glaze, stir. Powdered sugar glaze, orange juice or milk thickening. CAKE.
