Apple Cinnamon Pancakes Recipe

For a really fancy breakfast, you can top fluffy apple cinnamon pancakes with fried apples and apple cider syrup.

INGREDIENT

For the pancakes: – 1 1/4 cups flour – 2 Tablespoons sugar – 1/2 teaspoon salt – 1 teaspoon baking soda – 1 teaspoon baking powder – ½ teaspoon cinnamon – 1 egg, separated – 4 Tablespoons butter, melted and cooled – 1 cup buttermilk – 1/4 cup milk – Canola oil For the apples: – 1 lb. apples (3-4 medium apples), peeled and chopped into bite size chunk – Squeeze of lemon juice – 2 Tablespoons brown sugar – ½ teaspoon cinnamon – 1 Tablespoon butter – Pinch salt – Apple cider syrup, for serving

INSTRUCTION

Make pancakes first. Mix flour, sugar, salt, soda, and baking powder in a medium bowl. In another bowl, mix egg yolk, butter, buttermilk, and milk. Whisk yolk mixture into dry ingredients gently.

Step 1

Fork-whip egg white and carefully add to batter. Stop before batter smooths! Bumps in pancake batter are excellent!

Step 2

Start a big non-stick pan or electric griddle at 375 degrees or medium. Pour 1/2 cup mixture over heated pan. Let pancakes bounce. Flip and heat pancake 2-3 minutes until bubbles pop and golden.

Step 3

One-layer pancakes in 200°F oven. Meanwhile, sauté apples. Mix apple chunks, lemon juice, sweeteners, cinnamon, and salt. HEAT butter in a big cast iron skillet or pan on high.

Step 4

Heat half the apple mixture until bottom browns without stirring. Stir and simmer 5–6 minutes until sugar caramelizes and apples are soft but not mushy. Serve heated pancakes with apples and maple or cider syrup.
